My guess you've got a "nouveau" driver regression, or support for your pretty old hardware was dropped from this driver\kernel.
You could try proprietary driver, but since you've trying Bullseye you're out of options, because last version of Nvidia proprietary drivers that supported your VGA is 304.xx
and "nvidia-legacy-304xx-driver" package is available for Stretch, but not for current Stable or Testing.

Still, you can try to install 304.137 driver package from official Nvidia website [1], but this is not Debian-supported way of getting drivers and by doing this you can break your system.
