Voici finalement la solution que j'ai retenu et qui me donne complète
satisfaction :
J'ai modifié le fichier xorg.conf pour qu'il tienne compte de mes deux
cartes vidéo :

Donc je n'utilise pas xinerama (dans la mesure ou je ne souhaite pas
étendre mon affichage sur les deux écrans) et souris et clavier ne sont
actifs que pour le seul écran "Screen1".
J'ai ensuite modifié gnome (gnome-keybinding-properties) pour désactiver
les raccourcis clavier système (ALT-F4 par exemple), puis installé
Pessulus et Sabayon pour limiter les accès depuis gnome au seul
navigateur epiphany lancé au démarrage.
Enfin, pour exécuter de façon automatique la présentation open office
dans le second écran, je lance au démarrage de gnome la commande :
ooffice -invisible -show presentation.odp -norestore -display :0.1
Voilà, j'espère que ça servira à d'autres...
